[PATCH 2/2] configs: sandbox64: Enable PINCTRL_SINGLE driver

Align the sandbox64 defconfig with sandbox defconfig. Enable missing
PINCTRL single driver. This fixes ut_dm_dm_test_pinctrl_single test .
